Crust
• ¾ cup graham cracker (crushed)

Filling
• 8 oz. cream cheese (1 package)
• ½ cup pumpkin puree
• 1 large egg (room temperature)
• ½ cup granulated sugar
• 1 tablespoon all-purpose flour

Instructions:

• In a food processor pulse the rice until it turns into crumbs. Add these cereal crumbs to the pumpkin mixture and mix till completely combined. Now cover with a cling wrap and put it for an hour in the refrigerator to chill.
• Once chilled, make small balls, about 1 tablespoon for each ball. Line a baking sheet, place all these balls on it, and chill for 30 more minutes.
• In a microwave melt the chocolate in a 30 seconds interval or on a double boiler. Let the melted chocolate cool a bit.
• Take the chilled balls out from the refrigerator, dip them into the melted chocolate, and place them on the lined baking sheet. Now sprinkle some salt and let it set in the refrigerator.
